Red Velvet Cake




Resepi ni saya dpt from my friend Carol. Sarawakian but working in curtin, Australia..very nice n friendly. Saya nampak dia post gambar kek d FB,terus minta resepi dan dia dgn lajunya terus inbox! Lama saya simpan resepi ni, mau tggu special occasion konon baru buat...dan on 4/4/2012 my sista 29th bday...saya pun cubalah resepi ni...cuma my cake jd Cocoa velvet cake huhuhu....tiada kaler merah at home..but still sedap n dpt pujian ramai...sampai ada yg mau order tau!



Ok ni resepi nya...actually resepi y carol bagi ni utk cup cake tp sya buat 1 biji kek....modified here n there specially part cheese dia, sya guna resepi sendiri mengikut citarasa org2 rumah yg mmg hantu cheese :-)Ok ok..ni resepi asal yg carol bg.....

For the cake..

2 Eggs
1 1/2 Sugar
1 1/2 canola oil
1 cup plain yoghurt
2 tbs Red food coloring
1 ts vinegar (carol used apple cider vinegar)
1 ts vanilla extract
2 1/2 flour
1 tbs cocoa powder
1 ts baking soda
1 ts salt

For the icing( klu cupcake letak atas cup cake but sya buat sebiji kek jadi sya letak dlm kek)
2 cups mascarpone ( i change to philadelphia cheese - 1 buku )
1 cup icing sugar, sifted
1/2 cup 35% cream (nestle cream) - i change to whipping cream anchor "diary milk"
Zest of 1 lemon - i added 3 ts of lemon juice :-)

Method

Preheat oven dlm 350/180

In a food processor, mix eggs with sugar, oil, yoghurt, food coloring, vinegar n vanilla. Add flour, cocoa, baking soda n salt. Blend until just incorporated.

Place cupcake papers into a muffin pan, divide the batter in the cupcakes papers, pour only halfway so batter doesnt overflow. And bake. Rotating half way through, for 25 - 30 minutes. Remove n let cool.

For the icing
In a bowl, beat the mascarpone, icing sugar, cream n lemon zest together until the mixture smooth.

Pipe/spoon a dollop of mascarpone cream on the cupcakes.

Ok...atas ni saya copy paste resepi yg my friend carol bg n utk saya yg buat sebiji kek, sya baked dlm 45 mins tu kek..terpulanglah sama oven masing2 kan...lepas tu sya biar kan sejuk n belah kek tu..lepas tu letak cheese atas kek n sejukkan sekejap..(saya tambah 1 tbs gelatin + 3 tbs air)spya cream cheese sya tdk lembik sgt..jadi cantik lah klu potong.. Bila sejuk sikit sya letak lapisan kek y kedua n buka dr pan. Then tutup dgn fresh cream topping. Saya guna jenama topping ace (non diary milk) Pas tu saya tambah chocolate ganache.

Chocolate ganache - hiris2 chocolate masakan n letak dlm mangkuk. panaskan whipping cream dlm 1 mngkuk kecil, sya guna anchor diary milk yg tdk manis jd sya tambah sedikt icing sugar. Masukkan dlm 1 tbs besar unsalted butter. Bila semua sda masak tuang ke dlm chocolate n kacau perlahan2 sampai chocolate jadi cantik berkilat.

Ok, tu jak lah i think..apa2 just inbox me ok.



P/s - abaikan jak rupa paras kek yg kurang memberangsangkan tu k...tiada idea..tulis nama pun begegar tangan tu yg tiba2 ada bunga tu, utk cover tulisan yg terrrsongsang hahaha
